So Christmas is right around the corner and I can't help but think how busy everyone must get preparing for family meals. In between preparing for you family gathering you get hungry right? I know I do, so I prepared this quick easy meal to snack on during busy schedules.
1 cup shredded Cheddar & Monterey Jack Cheese blend
1 scallion, thinly sliced
Sliced pickled jalapeno peppers (optional)
Chopped or Sliced multi-colored bell peppers (optional)
Recipe Note: Quesadillas are an easy to make and turn into a whole new meal. You can even combine different varieties of shredded cheese, seasoning and ingredients you like. All this recipe is a guide to the taste you'd prefer.
Serving Suggestions: Serve with a salad and side of sour creme. Serve with rice of choice, I like Spanish-style or Whole-grain rice.

Ingredients:
2 cups (Grilled Chicken Strips)6 (8 inch) flour tortillas1 cup shredded Cheddar & Monterey Jack Cheese blend
1 scallion, thinly sliced
Sliced pickled jalapeno peppers (optional)
Chopped or Sliced multi-colored bell peppers (optional)
Directions:
- Heat Chicken according to package directions.
- Divide chicken among 3 tortillas; top with cheese, scallion and peppers. Cover with remaining tortillas.
- Heat medium skillet over medium high heat.
- Cook one quesadilla at a time for 2 minutes, or until browned in spots on bottom.
- Turn over; cook 1 additional minute, or until cheese melts
- Cut each quesadilla into slices.
